This was tagliatelle for two using just two eggs and 200g of strong white flour (instead of the recommended ‘00’ flour, but that’s all that's left in cupboard for now!). Gradually incorporate the flour and egg, knead by folding the edges into the middle and push down to stretch the dough, rest for 20 mins and roll out as thin as you possibly can, using a little flour to stop any stickiness. Finally cut into ribbons and pop into salted boiling water until al dent - just delicious! ⠀
